HOW TO MAKE A CHICKEN CURRY

Another chicken curry recipe. I’m pretty sure all of you have tried chicken curry right? But there are lots of types of this curry. But the famous ones are from India and Thailand. In Indonesia we also have chicken curry. Less spicy and spices compare to Indian and Thai ones. It is a very easy recipe this one.
Lets take a look at the ingredients.
Ingredients:
  • 1 kg of chicken
  • 1 can (400ml) coconut milk
  • 2 chilies
  • 3 cloves of garlic
  • 1 banana shallot
  • 2 lemon grass (crushed)
  • 3 cm galangal (crushed)
  • 4 candlenuts
  • 2 lime leaves
  • 1 bay leaf or 2 Indonesian salam leaves
  • 1 tsp ground corriander
  • 1 tsp ground turmeric
How to:
  • Blitz all the spices (except leaves, galangal and lemon grass)
  • In a hot pan add around 3 tbsp oil, put in all the chicken pieces. Saute a bit until the colour changed. Set aside.
  • In another pot add 2 tbsp oil, after it’s hot enough put in the spices puree.
  • Stir for 2 minutes until aromatic then you can add leaves, galangal and lemon grass.
  • Stir some more for another minute then you can add half cooked chicken into it.
  • Add coconut milk and let it cook for 20 to 25 minutes.
  • Add salt and pepper to taste.
